What does a saturated fatty acid have?
Single carbon to carbon bond.
What does an unsaturated fatty acid have?
Carbon to carbon double bond
as double bonds increase, mp of lipid decreases.
How are triglycerides formed?
condensation of glycerol and 3 fatty acids. form 3 ester bonds between glycerol and fatty acid. (COOH)
How are phospholipids formed?
condensation of glycerol, 2 fatty acids (unsaturated and saturated) and phosphate. make 2 ester bonds. (COOH)
Compare phospholipids and triglycerides
Both insoluble in water. Triglycerides hydrophobic but phospholipids are hydrophillic and hydrophobic so will form bilayer in water
Triglycerides 3 fatty acids so 3 ester bonds, phospholipids 2 fatty acids, 1 phosphate and 2 ester bonds.
What are uses of lipids?
used as insulation, cell membrane and storage.
What is the emulsion test for lipids?
ethanol + water , shake, white emulsion.
