Add 90ml Batch to mixing glass and stir for 15 seconds
Add 15ml red wine reduction to glass carefully to sit at the bottom of glass
Place 1 large rocks cube in Gypsy glass
Gently pour mixing glass contents onto the middle of the ice cube allowing to slowly fill glass, forming a reverse float on top of red wine reduction
Add plume of tomato & Aperol foam to top of glass
