How do you test for reducing sugars?

A

Benedicts test
1. add 2cm3 of the food sample to be tested to a test tube. If the sample is not already in liquid form, first grind it up in water

  1. add an equal volume of Benedicts reagent
  2. heat the picture in a gently boiling water bath for 5 mins
  3. Positive test shows yellow (low), orange (moderate), brick red (high)
