What’s a result you got without your operators approval that had a positive result?

A
  1. Andy Stanley used our store every year for a $30k+ sale that takes place offsite. however, the site was closed.
  2. The operator asked me to figure it out, but rejected my solution to partner with a church that i knew.
  3. I reached out to the church anyway and worked out all the logistical kinks.
  4. We did over $30k for the order, the church provided a team of volunteers, and Andy’s church said it was the best operation we had done for that order. They’ve done it that way every year since i have left.

What’s a time you were able to win over an operator to your vision?

A
  1. I noticed that David Boykin was very passionate about running the best profit for the Cathy’s. however, he admitted that he had not been able to get a grasp on food cost. in addition, he and his GM spent alot of time in operations which prevented development.
  2. I got to know David and proposed that i thought he should recover 1% of the foodcost and invest it into labor to focus on growing his new business in his new restaurant.
  3. I implemented a digital chicken tracking system and trained the operator and his leaders on the system.
  4. when i did a follow up call after the assignment, he said that he took my advice and food cost was .84% lower which recovered ($67k) for the year. He also invested 1% into labor and from 2018 to 2020 he went from 16.4% profit to 19.5%

Whats the greatest impact that you have had during your time in LDP?

A
  1. the Manteca location was scheduled to open in March 2020, however, due to not having any power from PGE being backed up with law suits, we were pushed one month and was on the verge of being pushed approximately 6 more months. Which the operator shared with me that would stretch him financially.
  2. We needed to find a way to someone get Micahs’ restaurant moved up on the list fast.
  3. Since it was a very small city, i knew we just needed to talk to the right people, so i asked Micah to draft up an email to send to the former and current mayor to explain why our business was specifically essential because of our unique ability to serve so many guests safely.
  4. The mayor responded and moved us up on the list with PG&E and we opened in may instead of November which would have cost Micah approx. $300-350k in profit before taxes.

  1. personally connected with a seasoned operator and his GM to help them recover lost profits.
  2. I had to figure out how to help them change their mindset of running low labor to get profit.
