What were you hired to do as the Assistant Director at Bradley Park?

A
  • I was hired out of college to become a part of Todd’s HPLT to prepare for his run for a 2nd restaurant.
  • in addition to learning the day to day ops, Todd tasked me with inventory and owning IPO.
  • I did a lot of research and sought much council from other operators and put a strategy together help lower IPO and aligned the entire team weekly.
  • we were able to reduce IPO by 18k/year from 1.02% to .55%. Most was a result of lowering food cost from .99% to .21%.

What was your role as the Marketing director?

A
  • I was asked to help drive marketing and increase sales the 3 main channels of sales growth ( check avg, trans, and outside sales)
  • I needed to come up with a strategy that would achieve this.
  • I hired two marketing interns, and coached them on all things marketing. We relaunched the app and i started utilizing a variety of team members to approach our marketing strategy unconventionally.
  • Catering increases by 78% and outside sales increased by 25%, both making up 33% of the annual sales increase. we grew mobile orders by 1500% from .1%-1.54% which was 47% more than the chain average.
