  • style (Bordeaux or champagne blend)
  • correcting faults
  • price (grapes might be cheaper from another region
  • balance of flavour or acidity
  • complexity
  • consistency (NV champagnes)
  • logistics - barrels blended to a large vat to shipping

A

It can be done pre fermentation (some roses are made this way) but usually just before stabilisation
