Old = earth/mineral driven. Tend to be geared to enjoy more with food
New= higher alcohol. Fruit-driven with dramatic aromatic profiles

What is ‘Riddling’?
The process of slowly turning and upending bottles in the Champagne method to concentrate the yeasts in the neck of the bottle.
What is Disgorgement ?
The process of removing the yeast from a sparking bottle made in the Champagne method. The neck of the bottle is frozen, and the star cap removed, forcibly expelling the frozen yeast plug.
How would you describe two of our sparkling wines we serve BTG with regards to the flavor and aroma?
Raventos - crisp
Lallier - bread notes, fuller
What does Blanc de Blanc mean? Blanc de Noir?
Literally white from white and white from black. Sparkling wine made entirely of Chardonnay or Pinot noir
