cereal grain composition

A

bran (13%) tough outside layer containing cellulose (fibre), b vitamins, some calcium, iron, phosphorus. usually removed during processing
endosperm (85%) contains starch, the protein gluten, which cannot b eaten by ppl w coeliac disease. some grains don’t contain gluten (maize)
germ (2%) most nutritious part of grain, contains lbv protein, b vits, iron, unsaturated fat
