Most common grains used in whisk(e)y?
Barley, Corn, Wheat, and Rye
How is barley malted?
The barley is encouraged to grow in a dark damp room, small roots come out after a few days (green malt). Heat halts the growth.
How are non barley grains prepared for whisky production?
Crushed, mixed, cooked, then added to malted barley or bought-in enzymes
What is wort?
The malted/cooked grain mixture created for fermentation.
How do distillers unpack and unroll starch?
Cooking crushed grains in how water
Why is barley malted?
To create enzymes needed for converting starch into glucose
Bourbon is must be made of at least 51% ….
Corn
Is Bourbon required to be high or low strength by law?
Low
What post distillation additives are not allowed in Bourbon?
Sugar, and caramel colour
What is a Straight Rye or Bourbon?
Matured for at least 2 years in new oak. No added flavour.
What is the Lincoln Count Process?
Same rules as Bourbon, but requires maple-wood charcoal filtering before entering barrel.
What is a Sour Mash?
Acidic residue from base of column still is added back to the fermenter.
Key points of Bottled in Bond
Made in one distillery in one year, aged for min of 4 years in wood containers, only water can be added. Must be bottled at 100 proof. (not limited to whiskey)
What is a Single Malt Scotch?
Fermented and distilled in just one distillery.
What is used in blended scotch?
At least one single malt and one single grain whisky
