Straight Bourbon
All requirements as Bourbon
Aged for minimum of 2 years
If aged for less than 4 years the age must be on the label
If age is stated it must be the youngest whiskey in the bottle
Bottled in Bond
Not blended
Sotred continuously for at least 4 years in wooden barrels
Bottled at 100 proof
Single distillery during a single season and year
Bottled under supervision of US Government in a bottling-in-bonding department specially constructed according to government specification

Recognized on November 23 2009
2:3 Water and Malted Barley all of which have been:
Processed at that distillery into a mash
Converted at the distillery to a fermentable substrate only by endogenous enzyme systems
Distilled at less than 190 proof
Minimum of 80 proof
Aged at least 3 years
Aged in oak casks no larger than 185 gallons
No added substances other than water and plain caramel coloring
Produced in Scotland
Single Malt Scotch
Bottled in Scotland
Made with Malted Barley and water only
Distilled in copper pot at a single distillery
Blended Scotch Whiskey
Made from several grains
Continuously distilled
Rye Whiskey
51% Rye Grain Distilled less than 160 proof Bottled more than 80 proof Aged in new charred oak barrels No younger than 2 years old
American Blended Whiskey
Blend of straight whiskies and neutral spirits containing at least 20% straight whiskey
Neutral Spirits are distilled at or above 190 proof
Bottled at no less than 80 proof
Canadian Whiskey
Principle grains are Corn and Rye and is not less than 2 years
Can be separate mash bills blended together before and after aging
Corn Whiskey
80% Corn
Stored in either uncharred barrels or re-used charred barrels
Irish Whiskey
Actually 2 kinds of whiskeys from Northern Ireland and the Republic of Ireland
North is a malt of whiskies and grain whiskey
Malt whiskies are distilled in pot stills
Distilled at about 111 proof from a mash of barley malt
Grain whiskey is distilled in continuous stills
Distilled over 180 proof
