• Inoculate your organism into a solution that contains
  Hippurate and incubate overnight.
• Detects if the organism can utilize Hippurate to
  produce glycine and sodium benzoate.
• Add ninhydrin: if glycine is present, it will deaminate
  it and the solution becomes purple.
• C. jejuni is Hippurate pos, other Campylobacter
  species are Hippurate neg.
