HOT WATER
Hot water extracts by first breaking down acids, flavonoids, glycosides, gums, minerals, mucilage, polysaccharides, and for a short term, volatile oils. Next, as more constituents are extracted, the hot water increases in its ability to break down plant material, and more difficult constituents, such as alkaloids, bitter compounds, and tannins are then extracted.
