Why do we need vitamins?

A

Vitamins are micronutrients and are needed in very small amounts. The body needs a wide range of vitamins to function properly. They are mainly needed to:
- release energy
- prevent some diseases
- assist in cell function and repair

A

Vitamins A, D, E and K are fat soluble vitamins. This means that they are found in foods containing fats and oils. These vitamins can be stored in the liver for later use.

What are water soluble vitamins?

A

B group vitamins and vitamin C are water soluble vitamins. Water soluble vitamins are absorbed by water so cannot be stored in the body. This means that they have to be eaten daily. They are easily destroyed by heat, water and exposure to air so they need to be carefully prepared and cooked.

What are the best ways to conserve water soluble vitamins?

A
  • Don’t prepare them until you need them
  • Cook in the smallest amount of water possible for the shortest amount of time
  • Steaming rather than boiling can conserve water soluble vitamins
  • The best way to get these vitamins is from fruit and veg raw
