Vitamin C (Ascorbic acid) is used for:
• essential component for the protein “collagen” (providing your skin with structure and strengthening your bones) and protection against arthritis
• Iron absorption (makes hemoglobin that allows absorption of O2 in red blood cells)
• Strengthening of the immune system and protection against Free Radicals (cardiovascular disease, prenatal health problems, eye disease, cancer, and skin health)
• Prevents more serious cases of colds or stress-related diseases.
How does vitamin C protect people from cancer?
Vitamin C is an antioxidant; this is a compound that prevents oxidation, a process that can produce free radical cells.
What is the recommended Vitamin C intake, and what foods produce the highest amount?
The Recommended intake (RDA) an adult should consume is ~500mg in both males and females. Vitamin C producers (fruits/vegetables): - 1 cup Orange Juice = 97mg - 1/2 cup Red Pepper = 95mg - 1 cup broccoli = 74mg - 1 kiwi = 70mg - 1 cup tomato juice = 45mg
What are potential consequences of vitamin C deficiency?
A lack of vitamin C will leave you vulnerable against diseases and also scurvy in extreme cases (weakness, anemia, bruising/bleeding, and teeth loss)
What solubility is Vitamin C, and how does it impact its function?
Vitamin C is water-soluble, meaning the vitamin travels through liquids and is absorbed in tissues. This means vitamin C is not sustainably stored in the body.
