They are mainly produce in Bouzy (Bouzy Rouge) and Ambonnay (both, Grands Crus of Montaigne de Reims district), Äy and Cumières (situated in the Vallée de la Marne, of which the first one classified as a Grand Cru, whereas the second as Premier Cru).

The memorably named village of Bouzy is famous partly because a small quantity of still red wine is made there. Red is essential for tinting champagne rosé (and magically increasing its perceived value).

A

All Champagne-appellation villages are classified in a ranking known as the échelle (ladder) des crus, which gives the grapes of every commune a % rating.
Until this century an indicative grape price was agreed for the harvest as a whole:
1. A grower in one of the Grand Cru communes would be paid 100% of the price.
2. Premiers Crus would receive between 99% and 90%, according to their place on the ladder.
3. On down to 80% for some of the outlying areas.
However, nowadays the grape price is agreed on an individual basis between the grower and the producer, although the vineyard ratings may still apply.

What are Rosé des Riceys?

Briefly describe Rosé de Saignée method.

A

Rare, still, pink wine made in the commune of Riceys in the Aube département (southern point in Côte des Bar), the southern end of the champagne region. This dark, rose-coloured wine is made by careful saignée of Pinot Noir grapes, by only an handful of producers. It can be one of France’s more serious rosés. Like Champagne’s still red wine, Bouzy Rouge (see champenois, coteaux), part of its appeal may be its name.

French term meaning ‘bled’ for a winemaking technique which results in a rosé wine made by running off, or ‘bleeding’, a certain amount of free-run juice from just-crushed dark-skinned grapes after a short, prefermentation maceration. The aim of this may be primarily to produce a lightly pink wine, or to increase the proportion of phenolics and flavour compounds to juice, thereby effecting a form of concentration of the red wine which results from fermentation of the rest of the juice with the skins. The second operation has often been undertaken by ambitious producers of both red bordeaux and red burgundy.

What is it Ratafia champenois?

A

Is an old, usually domestically produced wine-based apéritif made in the French countryside by drying grapes to a raisin-like state and then moistening and fermenting them in the spring. Ratafia champenois is self-explanatory but nowadays there are more profitable things to do with Champagne grapes.
