Q

Which weight on the sales have RM?
Describe the champagne market dynamics now in force.

A

The growers’ champagne, which nowadays include some of the most highly regarded, account for almost 1/4 of all sales.
Just over 1/10 of the total is put in the market by one of the growers’ co-ops (qualify as RC, récoltant-coopérateur on the label of these wines) established in Champagne’s dog days in the early 20th century.
But the champagne market is still dominated by the famous names, the iconic maisons of Reims and Epernay, together with a few, such as Bollinger of Äy (Vallée de la Marne district) and Laurent-Perrier of Tours-sur-Marne (Vallée de la Marne district, also), based outside the two Champagne towns.

Q

When was burn the Champagne business we know today?
And before, in the 18th century, how was?

A

The champagne business we know today was born in the first 40 years of the 19th century. The first notable step was taken by Madame (veuve) clicquot. One of her employees developed the system of pupitres to assist in the remuage process. corks were improved, and a corking machine developed. Understanding, and then mastering, the second fermentation took longer. The scientist and minister Chaptal had understood that ‘sparkling wines owe their tendency to sparkle only to the fact that they have been enclosed in a bottle before they have completed their fermentation’. But it took a young pharmacist from Châlons-sur-Marne, Jean-Baptiste François, to enable winemakers to measure the precise quantity of sugar required to induce a second fermentation in the bottle without inducing an explosive force.

Instead, throughout the 18th century, only a few thousand bottles were produced every year, and up to half of them would break.

Q

What is it CIVC? Which are its mansions?

A

Thanks to the Comité Interprofessionnel du Vin de Champagne, champagne is one of the most thoroughly organized wine regions in the world. The CIVC was established in 1941 as a co-operative organization grouping champagne growers, co-operatives, shippers, and houses under the auspices of the government.

The CIVC is charged with 1. organizing and controlling the production, distribution, and promotion of the wines of Champagne, as well as undertaking fundamental 2. research for the region. Until 1990 3. it set a price for the grapes and still intervenes to regulate the size of the harvest. But most importantly the CIVC is responsible for 4. defending the Champenois’s exclusive right to use the word ‘champagne’ (a notable victory was won in the English courts in 1959 and since then the name has achieved legal protection in most major markets, although not in the United States for established brands).
