What grapes are used in Valpolicella?
Composition of the blend:
● Corvina > 45-95%
● Rondinella > 5 – 30%
● Corvinone > 0-50% (only as substitute for Corvina) A marker of quality, as is the most age-worthy.
● Local varieties > 0-15% (e.g. Molinara, Negrara, Oseleta, no more than 10% each variety)
● Italian varieties >0-10% (e.g. Croatina, Sangiovese)
What is the fruttaio?
The drying room with racks and open windows used for Recioto and other Veneto sweet wines. It’s where Appasimento occurs.
What is Appasimento?
“Appassimento” is the traditional natural air-drying process that consists of
leaving the grapes to shrivel in a well-ventilated room called “fruttaio”. The
partially dried grapes lose about 35-40% of the water and the loss of water
concentrates aromas, flavors, sugar, and polyphenols.
Minimum aging is 2 years, and 4 years for Amarone Riserva.
