**Only Utiel-Requena is one contiguous piece; both Alicante and Valencia are composed of distinct portions linked by legislature and tradition rather than direct proximity.

What is Fondillón (fon-DEE-shjon”)?
A solera-style, oxidative dessert wine produced from overripe Monstrell (Mourvedre) grapes aged for a min. of 10 years. It is not fortified and it does carry the flavor of wood. Fondillón demonstrates a marked Oloroso-like character, although with faint sweetness and without the heft of fortification.
What is Doble Pasta?
Wine fermented and macerated with double the amount of grape skins and pulp. Used in Utiel-Requena and Alicante, both in Valencia.
What are the main grapes of Uclés DO ?
Red varietals of Cencibel, Garnacha, Cabernet Sauvignon, Merlot and Syrah.
-White wines, sparkling wines, and sweet, dulce wines are also produced.
