Designation used in Ribeira Sacra DO:

“Summum” wines of any color now must include at least 85% of principal varieties.
*Mencia is no longer required to be dominant in “Tinto Summum.”
Ribeira Sacra Tinto now must be made with at least 70% Mencia.

Rosado wines are now permitted and must be from at least 85% principal varieties, and are thus always considered “Summum.”

“Barrica” requirements are unchanged, but there is now a “Garda” designation for reds aged at least 7 months and whites 4 months. Reds must be aged in wood barrels 225L to 10,000L, or in concrete/other materials up to 5,000L. Whites must be aged in wood barrels 225L to 8,000L, or in concrete/other materials up to 5,000L. “Other materials” does not permit steel or polyester.

  • Blanco Barrica: min. 3 months in wooden barrels of no more than 600 liters capacity; also min alc goes from 11 to 12%
  • Tinto Barrica: min. 6 months in wooden barrels of no more than 500 liters capacity; also min alc goes from 11 to 12%

What is parral and why is it used?

A

Another name for the pergola system, used in Rias Baixas. Granite posts hold up the pergolas, and the overhead canopy provides grapes with shelter from the region’s marginal weather and the opportunity to cultivate other crops between vines. It also enables greater airflow to combat mildew and rot, encourages greater photosynthesis and ripening by maximizing leaf surface, and protects grapes from sunburn.
