Pausterised
The process by which harmful organisms, pathogenic bacteria and viruses in liquids are eliminated by heating it to a critical temperature (85-89 degrees C) for a specified amount of time (15-30 min). When a liquid is pasteurised there are a number of neutral or beneficial organisms remaining, as opposed to sterilisation, which destroys all life forms
Homogenised
Milk with the lipid particles broken up and dispersed uniformly so the cream will not rise
Coagulate
A process involving the denaturation of proteins, the loss of their native, soluble structure, so that they become insoluble; it may be affected by heat, strong acids and alkalis, metals and other chemicals
Aseptic precautions
The methods used to prevent contamination by unwanted microorganisms , such as filtering the air and sterilising the fermenter with his pressure steam
