USDA grades reflect the flavor and tendernedss of meat. Primarliy determined by carcass maturity and the amount of fat within the meat. This effects tenderness, juciness and flavor
Why do we use abundantly marbled Prime corn fed beef?
Beef futs with hight levels o fmarbling are more likely to be tender, juicy and flavorful.
Our USDA are abundantly marbled at 11% and above.
