What’s montevertine?
It’s the “true” Chianti Classico, 100% Sangiovese, (some colorino or canaiolo at times) but no trebbiano -which is why it left the consortium and the appellation in 1981. La pérgole torte is their single vineyard, pian del ciampolo is their entry level
What’s governo?
It’s a vinification technic used in Chianti to add flavor and body, about 10% of the lesser grapes (colorino, etc) are left to dry like passito style and later added to the already fermented wine causing a second fermentation and as a result a prickly sensation on the palate
