Tuna Day - Sake pairing Flashcards
Kikusui, Funaguchi Sparkling notes:
Funaguchi Sparkling is a canned sparkling sake with wonderful textured bubbles and robust flavor. Being un-pasteurized(Nama) offers unbeatable freshness & richness.
Tenzan, Nama Junmai Ginjo (Shichida Nama) notes:
Once-a-year released nama version of the popular Junmai Ginjo. The juicy notes of plum and overripe peach burst from the glass. There is a feeling of freshness and an almost imperceptible effervescence. There is a spreading richness on the tongue and a sweet finish. We recommend with spicy dishes seasoned with togarashi or sansho peppers.
Suehiro Fukushima Densho Yamahai notes:
Elegant sake featuring complex aroma of hay and smoke. On the palate, it is round, smooth and well-balanced with a pronounced Umami quality of gentle sweetness playing against the acidity, a hallmark of Yamahai sake.
Tenzan, Shichida Junmai Yamahai Umakuchi notes:
This sake has a rich, full mouthfeel with savory character. It has a subtle aroma, but on the palate, dried mushroom and parmesan cheese dominate. Bold, umami-laden and impactful, this sake is best served at room temperature or slightly warmed.
Gozenshu, Bodaimoto Junmai notes:
Floral aroma with notes of green apple and grapefruit followed by a nuanced minerality. This sake is a great bridge-sake for wine-drinkers, sharing some characteristics with the Chenin Blanc grape. Crisp and clean finish, best served chilled. Usu-nigori means that it is lightly cloudy compared to a full nigori.
Heiwa Tsuru Ume Kanjuku (optional add on) notes:
howcases both tart and sweet fresh plum characteristics. Kanjuku means fully matured or ripened.
This umeshu has bright, mouthwatering acidity and a richly sweet finish. Wakayama is known throughout Japan for growing fruits, and the nankobai plums used are a highly regarded regional varietal.
