What is the test for lipids?
A
- vegetable oil in test tube, add ethanol, shake thoroughly to dissolve oil, pour mixture into test tube 3/4 filled with water
- positive result = white emulsion on surface of water
- alcohol mixes with water leaving lipid to form emulsion of microscopic droplets suspended on surface

Explain the structure of triglycerides
A
- formed by combining 1 glycerol (alcohol) with 3 fatty acids (carboxylic acids)
- E- shaped
- hydroxyl groups interact (HO from fatty acids + H from glucose) creating ester link O-C=O + 3H2O
- hydrolysis = reverse; 3 H2O molecules needed
