Describe the production of the transfer method
A
-same as trad method, up to riddling
-2nd ferm takes place in bottle, but not same bottle that is sold
-no riddling= no fining agents/flocculation agents added to liqueur de tirage
-after ageing bottle on lees, bottles chilled to 0 degrees, enter transfer machine
-wine poured into pressurised receiving tanks

Why was the transfer method created?
A
-avoid manual riddling costs whilst retaining brioche/biscuit aromas

Once the wine has entered the transfer tanks, what can they do next?
A
-final treatments:
-dosage added
-SO2 topped up
-sterile filtered immediately prior to bottling
