Toxins and pesticides Flashcards
What is Phtohaemagglutinin and where is it found?
A lectin found in plants and legumes
What does Phytohaemagglutinin do?
Induces cell mitosis and effects cell transport functions
What are Ribosome Inactivating Proteins (RIPs)?
Catalytic toxins
What do RIPs do?
One part targets and mediates entry, the other modifies rRNA
What is the difference between endotoxins and exotoxins?
Endotoxins are cell bound and released in large amounts
Exotoxins are released from the cell as it grows by enzymes
What are the 3 fungal species?
Aspergillus spp
Penicillium spp (rot)
Fusarium spp
What does toxicity depend on?
Toxicity of substance
Dose
Biology of organism
Chemical properties of substance
What is ADI?
Acceptable daily intake= No observable adverse effects/100
What is tolerance level?
ADI/Daily food intake
What are moulds and yeasts susceptible to?
Weak acids
What do strong acids do?
Give sour flavour and cause extracellular effects
What acid is used for total dissociation of moulds and yeast?
Both acids
What increases as fatty acid chain length increases?
Antimicrobial activity
What esters are found in foods?
Alkyl esters ranging from C1 to C7
What happens when ester length increases?
Increases hydrophobicity and potency
