Explain the Governo Process?
Full name is Governo All’Uso Del Chinati
This is refermentation of racked wine with 5-10% of must from grapes that have been dried out on cannicci or castelli ( special wicker frames)
This proces can be repeted again in march or april and is coled Regoverno.
This proces is used to start Malolactic and to incrise Glycerol so wine can be more round and refreshing.
What is Bolgheri DOC and when is introduced?
Its introduced in 1994 to bring in Sassicaia that was made primarly from Cabernet Sauvignon and Cabernet Franc

Sassicaia was first single estate to be granted its own sub-app DOC
