Please explain the tokaji Azsu style wine
Production starts with a base wine that is made from healthy grapes.
Before,during or after fermentation the azsu berries are macerated in the base wine. Usually last 12 to 60 hours.
Traditionally the botrytised berries were made in to a paste, but using uncrashed aszu berries avoids the extraction of bitter flavours.
After pressed this mixture, the wine is matured in oak period of time.
The amount of azsu berries used determines the sweetness of the final wine.
The unit used to Express the level of sweetness is the “puttony”
Classic tokaji deep amber colour, high acidity, intense aromas and flavours of orange peel, apricots, and honey.
Please explain the Tokaji Eszencia
These are extremely rare wine.
Eszencia is made from free run juice of the “azsu berries”
The must is so sweet it can take years to ferment. Usually less than 5 abv alcohol.
The legal minimum of residual sugar is 450 g/L
Balanced by very high acidity and the wine have enormously concentrated flavours.
They are able mature and retain their freshnes for a century or more..
Please explain the modern style sweet wine of tokaj
These wines usually made from late harvest grapes, some may use botrytis infected grapes where noble rot is present.
These wines are produced by fermenting the botrytised grapes. Style is used like sauternes and tba.
These wines typically labelled as late harvest.
