lighter paler wines with more finesse goes to biological aging
Darker richer heavier wines goes to oxidative aging
Fortification for biological is 15 - 15.5 abv
Fortification for oxidative is 17 abv
Biological aging flor is important. It’s made up number of yeast strains. They feed off the alcohol and the oxygen in the atmosphere to produce Co2 acetaldehyde. Acetaldehyde gives unic flavour to biologically aged sherries. Flor consumes alcohol and nutrients there for addition of new wine is needed.
Oxidative aging has no flor and impact of oxygen on these wines is greatly enhanced by the air present in the part filled butt. Introducing of young wine is helps to preserve the base character and other wise become overly oxidised.
What are the differences of fino and Olorosso sherry?

For olorosso darker richer wines goes to fortification with 17 abv and than sobretabla than straight oxidative aging in solera system.after complete it olorosso is coming out.

How the Solera system works
The wine made from palamino grapes diveds to lighter paler for Biological aging with 15abv

After that wine goes to Sobretablas to be transfer Criaderas. It can be 3 to 14 criaderas
For each line of Criaderas are blends than transfer to another line of Criaderas
Last line calls solera. The wine taken from that line blends than goes to the bottle.
Dry style Sherry are
Fino/Manzanilla( biological 15abv)
Amontillado(biological 15abv+oxidative 17abv)
Olorosso (oxidative 17abv)
Sweet style sherry are

- *Medium= Amontillado(biological 15abv+oxidative 17abv) +PX
- *Cream= Olorosso (oxidative 17abv)+PX
