Describe the process of Tokaji Szamorodni

A

may be dry or may be sweet

Dry:

  • grapes harvested ‘as they come’
  • some noble rot characters
  • must age in cask for 12 months, 2 years old before release
  • most wines aged longer
  • partially filled barrels, flor yeast like characters

Sweet

  • no flor yeast
  • may have oxidative characters
  • trend towards filling barrels and less oxidative flavours

before, during, or after fermentation, aszu berries are macerated and added to base wine (12 - 60 hours)

pressed and put into oak
