Describe the process of Tokaji Szamorodni

Dry:
- grapes harvested ‘as they come’
- some noble rot characters
- must age in cask for 12 months, 2 years old before release
- most wines aged longer
- partially filled barrels, flor yeast like characters
Sweet
- no flor yeast
- may have oxidative characters
- trend towards filling barrels and less oxidative flavours
