In the days before refrigeration, a common practice to preserve meat was to add a ton of salt. Why did this work pretty well?
The salt that surrounded the meat would be hypertonic compared the microbes on the meat (which cause meat to rot), therefore water would leave the microbial cells, killing the cells. With the microbes gone, the meat would take more time to rot
