Confit
Confit is a French cooking term that means cooked in its own fat. The duck has been cooked for a long period of time in duck fat at a very low temperature. This method results in incredibly flavorful and moist meat.
Kimchee
Kimchee means “pickled” in Korean and can refer to any vegetable treated this way however it is usually cabbage.
Berkshire Pork
Berkshire pork is some of the highest quality pork you can get. It is prized for its fat marbling and flavor. It is pinker in color than pork you’d buy at the grocery store.
Kurobuta Pork
Japanese word for “black pig”. 100% Berkshire pig.
The wagyu of the Pork world. In Japan the hogs are bred and raised according to specific regimens, and certified by the Japanese Ministry of Agriculture, Fisheries and Foods as “Kurobuta”.
Tajima Beef
Tajima is the most famous of all Wagyu bloodlines. It is double bred so its 75% tajima cattle. Originating from the Hyogo prefecture, these black cattle were used to pull carts and ploughs, which resulted in them developing larger forequarters and lighter hindquarters. They are generally smaller-framed with slower growth rates but produce excellent meat quality with large eye muscle and superior marbling. They are thought to be ideal for the production of F1 cattle. The Tajima bloodlines are generally regarded as producing the best quality meat in all of Japan. Selected Holstein females are artificially inseminated with selected full blood Tajima Wagyu sires. The resultant progeny is collected from the dairy farms at seven days of age and moved to dedicated calf-rearing facilities. The calves are later moved to feedlots, where they are fed a Japanese designed ration for a minimum of 500 days. At all stages of the production chain, cattle are managed in accordance with strict quality assurance protocols. All cattle are hormone free, antibiotic free and Tajima Wagyu beef is produced under the Japanese Food Safety program JASS, providing full traceability. Minimum 500 days’ grain fed /Average carcass weight 420kg HSCW / Halal approved /Marble score 4-5, 6 & 7-8, 9+ / Meat colour 1a-3 /Fat colour 0-3.
Toro
Toro is the fatty portion of the tuna belly and it is prized for its rich flavor.
Tempura
Tempura batter is distinguished from all other batters for 2 reasons: The flour is much finer and it always has club soda in it. The carbonation in the club soda makes the fried item much crispier.
