- Interrupting the fermentation
- Adding sweet component in wine for example unfermented grape juice
How to interrupt the fermentation?
Fermentation can be interrupted from the following ways :-
- By using fine filter and to ensure that nothing is remaining inside
- Fortify the wine (add alcohol)
Fortify technique is used to produce port wines as well as many fortified muscat wines
