How are the grapes handled?
A
Once picked, the grapes destined for naturally sweet wines are sun-dried to concentrate their sugar levels. This process also develop flavours of raisin.

When do winemakers stop the sun-drying?
A
Once the desired must weight is achieved the grapes are pressed and fermentation started.

How is the juice from sun-dried berries?
A
The grapes yield such a concentrated juice that the yeast struggle to ferment the sugars and rarely mange more than a few degrees of alcohol.
