Named after a transpacaific travelling boat between japan and south america, gives the influences for the flavours used.

Genever brings some toasty/malt notes that pair with the yoghurt/rice and then fresh grassy flavours of the tea, cachaca and pisco.

Topped with like zest for citrus oil on the nose.

Very fresh and light.

Classic martini riff, named after the Tuxedo Club, early 1900s.

Ki No Bi gin = premium spirit, japanese botanicals (japanese red pine, bamboo etc) rice spirit base, pure ground water from Fushimi district. From North kyoto.

Vintage absinthe, rare, Pernod = oroginal brand, created in 1805 in France.

Reserve cocktail, served in half martini glass, rest served in carafe on crushed ice.

Martinez twist created by Ada Coleman at the Savoy in the early 1900s

71 Gin = premium brand, blended gin from distilled botanicals, batches seperately aged in sherry, cognac and toasted oak casks for 71 days. Includes grapefruit, damask rose, flower from queen of the night cactus.

Vintage Fernet = highly sought after.

Serve in half martini glass, rest in carafe on crushed ice. Serve with Orange twist, express over drink and ask guest if they would like it in or on the side.

Floral, bright, herbaceous.

A modern classic created by Joaquin Simo at Pouring Ribbons in NYC. Ours swaps out chichicapa for wild tepextate for floral and candy notes. VEP chartreuse = 8 years aged in oak.

VEP chartreuse: chartreuse is already limited, aged is rare.

Tepextate is wild harvested from slow growing marmorata family agave which like challenging environments.

Classic tiki drink created at Aviary bar in Kuala Lampur. Fresh fruit with some bitterness and vanilla. Only 1/4 Oz of Samaroli, brings some dryness. Only ~350 bottles made.

Vintage Campari: highly sought after, smoothens and mellows over time, made with carmine (from beetles).

Staple of japanese bars: simplicity perfected. Ours has floral fruity notes with chocolate + coconut water pairing.

Hibiki: blend of japanese malt and grain whiskies from various distillers, notes of orange peel and chocolate.

White peony: supplied by rare tea company, ethically + sustainably farmed and hand picked, processed carefully to retain the delicate flavours. Cold brew extracted to avoid harsh bitter flavours, and lightly carbonated.

Created in 1838 by antoine peychaud, an apothecary in new orleans, with his favourite brandy (the same we use, sazerac). Evolved over time replacing cognac with rye, then adding absinthe and then peychauds bitters when absinthe was banned.

Floral and stone fruit notes along with the spice forward profile.

Sazerac cognac: premium no age statement cognac, made in the spirit of tradition, replicate flavours of how it was in the 1800s, using traditional methods and grape varietals. Rich notes of dried fruit, cinnamon and orange peel.

Van Winkle: extra aged rye produced in Kentucky. Most matured for max of 4 years. This one matured 13 years in cask. Unusually complex. Very expensive.
