3/4 oz stirrings triple sec
Shaken, strain over fresh ice
Glass: Tall collins

Mai Tai
1 oz well silver rum
1 oz house gold rum
1/2 oz pierre ferrand curacao
1/2 oz orange juice
1/2 oz liquid alchemist orgeat
1/4 oz lime juice
2 dashes ango orange bitters
Shaken, strain over fresh ice
Float dark rum.
Glass: short collins
Garnish: mint bouquet and orange wheel
Saigon Mule
2 oz well tequila
3/4 oz ginger syrup
1/2 oz domaine de canton
1/2 oz lime
Crush ice
Shaken, add 2 count soda and splash of sprite, strain.
Glass: copper mule
Garnish: lime wheel & ginger flower design
Toki Highball
2 oz Toki
Top with soda
Pour directly into glass
Glass: short collins with 2 small rocks
Garnish: grapefruit peel
Whiskey Sour
2 oz well bourbon
3/4 lemon
3/4 simple
egg white
Add lemon, simple, egg white, to shaker, dry shake. Add bourbon and ice, shake and strain.
Glass: chilled coupe
Garnish: bourbon cherry and peychaud’s bitters
Penicillin
2 oz well scotch
1/2 oz lemon
1/2 oz ginger
1/2 oz honey
Stirred, strain.
Glass: double rocks glass w/ large cube
Garnish: lemon peel
Hemingway Daiquiri
2 oz plantation rum
1/2 oz luxardo maraschino
1/2 oz lime
1/2 grapefruit
1/4 simple
Shaken, strain
Glass: chilled large coupe
Garnish: lime wheel
Paloma
2 oz well tequila/mezcal
3/4 oz grapefruit
1/4 oz lime
Shaken, strain over fresh ice.
Top with sprite.

1/2 oz cinnamon syrup
1/2 oz grapefruit
1/2 oz golden falernum

spoon lemon
Shaken, strain over crushed ice. Top with angostura bitters.
