  2. cut the citrus in half lengthwise
  3. make a partial cut in the center half of each half crosswise
    4.cut each half into 1/4 inch slices

  1. strip the long pieces of a citrus peel
  2. holding the peel with the meaty part facing you and outside facing the glass, squeeze to release oils over the glass
  3. rub twist around rim (optional)
  4. discard, place it in drink
    - if using rocks/old fashioned glass, place peel as is
    - if using coupe: place peel as is or twist into a coil and balance on rim
    - is using champagne/martini glass: place as is or coil into glass
