how is beer made

A

fermentation (sugar –> co2 and alc)

grains –> seeds –> malting process (steeping the grain in water to start sprouting, then drying in a kiln) –> grains get mashed/steeped in hot water to release the sugars –> water drained to yield a syrupy sugar water called a wort –> wort is boiled, with hops added to alter flavor –> placed in fermentation vessel, yeast added –> years later beer is made

  • pale ale –> lighter, lower alc
  • india pale ale –> herbal, hoppier, citrusy, bitter
  • brown ale –> toasty, caramaly, mid alc and hoppiness
  • wheat beer –> lighter color and alc level, funky/tangy
  • porter –> dark beer; less coffee, more chocolatey; roasty
  • stout –> dark beer; sweet, malty, creamy, coffee, chocolatey
  • sours –> fruity, tart, acidic, salty notes

how wine is made

A
  1. crush grapes into seeds, juice and skins (must)
  2. if making white wine: remove seeds and skins
  3. if making red wine: remove the skins and seeds after fermenation
    - the longer the wait, the darker the wine
  4. maseration: soak that shit

if anything just remember fermentation and maceration

red wine:
- skin and seeds removed AFTER fermentation
- aged in oak barrels

white wine:
- skin and seeds removed before fermentation
- aged in steel barrels

for reds purple hues = younger wine
whites: pale yellow = younger wine
legs (liquid that clings to the glass and drips down after swirling it) - longer legs = higher alc content

body: weight and texture of wine
tannin: more tannins, more bitternesss
acidity: more acidity results in more saliva after sipping
the finish: the length of time you taste the wine after swallowing it (aftertaste)
