How is Asti fermented?
Grape juice is chilled and stored until needed. For production the juice is warmed to begin fermentation in pressurised tanks. Initially, Co2 is let to escape. Partway through the fermentation, the tank is sealed so Co2 accumulated in the tank to create bubbles. Fermentation is usullay stopped by chilling the wine at 7% abv alcohol. Wine is filetered and bottled for immediate sale.
