In 1531 when the Benedictine monks of Sainte-Hilaire in Limoux deliberately produced a sparkling wine by continuation of the first fermentation.

A liquid solution of yeast wine and sugar that is added to the still base wine in order to create the secondary fermentation in bottle.

AKA riddling, the rotating and tilting of a bottle in order to gradually move and collect the sediment at the neck of the bottle.
