Soaps And Emulsions Flashcards
What is the reaction to make soaps
Fat/oil + Alkaline -> glycerol + soap
What does the alkaline do (NaOH)
Turns the fatty acid created into a soap
What type of reaction is this
Alkaline hydrolysis
Why do fats and oils not dissolve in water
They are non polar
Soaps have a ____ head and a ____ tail
Polar/hydrophilic head
Non polar/ hydrophobic tail
What is the first step of how soaps work
The soap molecules (tail) can dissolve in the grease causing the neg charge to be pointing out
What is the next step of how soaps work
Mixing causes globules to form. The beg charges repel each other and the grease is suspended in the air. These are now attracted to water and they get washed away
What is an emulsion
Is a liquid containing 2 different things mixed together
What is an emulsifier
A compound which brings two substances together which would normally separate
How do you make an emulsifier used in food
Reacting edible oils and glycerol - but only makes one or two fatty acid groups rather then 3
