BUTCHER’S FRIES

A

Fries: Potatoes are cut using the fry cutter and held in water to help remove starch. They are blanched in the fryer at a lower temperature and then again at a higher temperature at the pick up. Seasoned with salt and tarragon.

ROASTED CARROTS | Lemon-Cumin Yogurt

A

Yogurt: Greek yogurt is mixed with olive oil, ground cumin, lemon zest and juice and placed on the bottom of the plate.
Cumin: Cumin is a flowering plant in the family Apiaceae, native to southwestern Asia including the Middle East. Its seeds – each one contained within a fruit, which is dried – are used in the cuisines of many cultures in both whole and ground form.
Allergies – Dairy- Yogurt (optional)

A

Peppers: Simply blistered in the fryer and finished with lemon juice and
sea salt.

BRUSSELS SPROUTS | Sherry Vinegar, Honey

A

Brussels: Halved or quartered according to size. At the pick up they are tossed in the fryer until crispy. They are then tossed in a syrup made from Sherry vinegar & honey and seasoned with salt and pepper.
Allergies – alcohol, gluten (from the fryer)
