VEGAN CARROT SOUP (Coconut Milk, Ginger)

Soup: Carrots are sauteed and cooked down with the onion, celery, garlic and ginger in Coconut Oil. Coconut milk is added and then seasoned to taste. The soup is then blended to a smooth consistency.
Garnish: Extra-Virgin Olive oil and Aleppo Pepper Spice

Pasteurized Feta: Feta is a brined curd white cheese made in Greece from sheeps milk or from a mixture of sheep and goats milk. It is a crumbly aged cheese, commonly produced in blocks, and has a slightly grainy texture. Feta is used as a table cheese, as well as in salads and pastries.
Vinaigrette: Balsamic Vinegar emulsified with Honey Olive Oil

BEEF TARTARE | Capers, Cornichon, Parsley, Quail Egg Yolk, Chive Aioli

Tartare: Eye-round beef is diced into small cubes and mixed with Dijon mustard, chives, salt, pepper,
Worcestershire, cornichons, capers, and shallots. Garnish: Topped with chive aioli and whole grain mustard aioli and served with toasted sourdough.

BROOKLYN BURRATA | Pepper Relish, Basil, Kalamata Olive Oil

A

Burrata: Whole burrata which is a mozzarella style cheese that has been filled with stracciatella and cream. ½ of the burrata is used.
Relish: Roasted red peppers are diced into a fine brunoise and mixed with a brunoise of shallot, chives and tossed with Sherry vinegar and olive oil with salt and pepper to taste. Kalamata oil: Olives are dried overnight in a low oven and then pureed with Agar Agar and emulsified with olive oil.
Garnish: Served with a side of toast
Allergies- dairy, gluten (optional)
