1 lb. Loaded Potato
Very large Idaho potato tossed in oil, kosher salt, and black pepper and baked. Potato is loaded with butter, sour cream, cheddar cheese, smoked bacon, and scallions

Creamed Spinach
12 ounces of spinach and sautéed onions and garlic tossed with a white cheese mornay sauce. Topped with Parmesan and broiled in an iron skillet to form a golden brown crust.

Grilled Asparagus
12 ounces of Asparagus, grilled and served on a large oval platter
Vermont Cheddar Mac n’ Cheese
Cheddar cheese mornay, cavatappi pasta, and parsley are mixed together in an iron skillet and topped with Parmesan. It is broiled to a golden brown cheese crust and garnished with chopped parsley.
Mornay is a cheese variation on a béchamel sauce, that utilizes flour, milk, egg, and butter that is warmed before the cheese is added.

Pasta Primavera
Side portion of the entree.
Truffled French Fries
Hand cut shoestring potatoes deep fried and tossed with sea salt, black pepper, chopped parsley, Parmesan, and white truffle oil and served alongside good old Heinz ketchup
Crab & Cauliflower Gratin
Cauliflower is simmered in heavy cream until tender, and the heavy cream is fortified with Parmesan cheese, garlic, thyme, and truffle oil. Once the mixture cools, lump crab meat is folded in. It’s portioned into cast iron skillets and topped with breadcrumbs before being baked in the oven. Garnished with parsley.

Cauliflower and Broccoli Rabe
Roasted cauliflower and grilled broccoli rabe over a romesco of toasted bread, toasted almonds, olive oil, roasted red peppers, roasted garlic, roasted tomatoes, and sherry vinegar puréed until smooth.
