Gulf Oysters on the Half Shell
We carry only Gulf Oysters, though the exact kind will vary, including producer and home waters. All oysters are accompanied by wedges of lemon, cocktail sauce, classic mignonette, a specialty mignonette or sauce, and horseradish. Lance saltine crackers and various hot sauces are available upon request.
Chargrilled Oysters
6 each fresh gulf oysters on the half shell topped with garlic, Parmesan, Worcestershire, Tabasco, fresh herbs, and butter, then roasted at a very high heat until cooked.
Oysters Rockefeller
6 each fresh gulf oysters on the half-shell topped with a mixture of sautéed spinach, our mornay sauce, garlic, Pernod pastis (a licorice/anise flavored French liqueur, salt and peppper, and buttered panko bread crumbs. Roasted at a very high heat until cooked.
Shrimp Cocktail
5 each U-15 shrimp (15 shrimp per pound) poached lightly in a court bouillon (lemons, bay leaves, peppercorns) then chilled, peeled, and cleaned. Served with cocktail sauce and lemon.
Seafood Tower
2 platters filled with
-18 gulf oysters
-6 cocktail shrimp
-3.5 ounces of smoked salmon
-3.5 ounces of tuna tartare
-1 8oz cold water lobster tail (poached, chilled, and split down the middle)
-Condiments — cocktail sauce, classic mignonette, prepared horseradish, specialty mignonette of the day, lemon wedges, and a bottle of Tabasco
