What is unique about Equipo Novasos?
Summary: Sherry author Jesús Barquín and Grupo Estevez Technical Director Eduardo Ojeda joined forces to create Equipo Navazos in 2005. What began as a small-scale project to release a bottlings for private consumption experienced major success and went commercial by their sixth bottling.
Initially, Ojeda found a particularly noteworthy barrel of Amontillado that had not been touched for decades. Ojeda and Barguin then approached their fellow Sherry enthusiasts and collectors and pooled funds to purchase the barrel for bottling—and so began La Bota de Amontillado No. 1 in 2005.
Given the sheer number of bottlings, Equipo Navazos does not exhibit a general house style, but instead aims to emphasize the importance of vineyard site to Sherry wines.
Barquín and Ojeda seek out specific casks within particular soleras, looking for distinctive characteristics to be bottled alone.
Each wine is labeled in sequential order of bottling; at the time of this writing, Equipo Navazos has released just under 50 “La Bota” bottlings. Barquín and Ojeda continue to seek top wines from bodegas throughout the Sherry Triangle for this project. Barquín states, “these wines are not for mass market consumption, they are made for those who appreciate them.”

What is special about the Valdespino wines?
Brief Description of Style/Vinification Techniques:
Valdespino’s most famous wines Inocente Fino and Amontillado Tío Diego are both barrel fermented by indigenous yeasts.
Both wines are then introduced into their own soleras – with a larger than average number of criaderas – where it spends an uncommon 10 years under flor. Tío Diego ages twelve years under flor followed by 5-6 years aging oxidatively.
The house is known for their more elegant and concentrated style from the uncommonly long period spent under flor during biological aging.
Where do the best Valdespino wines come from?

This prized vineyard is located at high altitude, planted on entirely albariza soils and is part of the Grandes Pagos de España.

What is unique about El Maestro Sierra?
Brief Description of Style/Vinification Techniques: El Maestro is unique in that it is one of the only prominent houses to still use many of the
traditional tools and methods,
such as quarterly transfer of the different stages in the soleras by hand and using canoas, jarras, sifóns, and a rociador for siphoning, transferring, and refreshing wines.
The wines are all handled by hand, and they employ their own in-house cooper.
The bodega is situated on top of a bluff, giving unobstructed exposure to the cooling winds coming off the ocean, resulting in cooler temperatures and more vigorous flor growth. The wines spend longer than average time under flor in these advantageous climatic conditions.

Like many other Jerez bodegas, El Maestro Sierra sold their vineyards in the 1930s and 1940s. Presently they purchase their base wines from a local cooperative (mostly from the pago Balbaína), with an agreement to source grapes from the same growers and parcels each year.
