What is fractional blending? Describe the process.
This is the system that a solera is based in. It involves adding new wine as wine is removed. This results in a multivintage wine dating back to whenever the blend began.

New wine, usually watched for some time (longer if biologically aged to make sure flor is growing) that will eventually be added into the solera.

35% (normally bodegas only remove 10-15%)
