In the winter. There is high rainfall, however not in the growing season.
What is the soil type of Jerez and it’s characteristics?
The soil type is Albariza. It has a high chalk content. It is free draining and also has the ability for high water storage.
What are two ways water storage is enhanced in the Albariza soil?
In the winter, rectangular pits are created between the rows of vines to capture water and reduce run off. The soil also forms a hard crust in the hits summers, which reduces evaporation and retains water beneath this layer.
