sensory evaulation
the assessment by the human senses of all the qualities of a food product that are perceived
Sensory properties often determine the acceptance or rejection of foods
All 5 senses are used: sight, smell, touch, taste and sound
what is the effect of running tests?

determines differences b/w food samples. Typically, participants receive in-depth training & are selected through a series of tests
First, they are screened based on:
Lifestyle - ex: smokers would be rejected b/c smoking effects the sensitivity of your taste buds)
How well someone can taste bitterness (some people have a very low threshold)
Participants are selected
Invited to various sessions & given a variety of products to evaluate
Use scales (ex: rate on 1-10)
Monitor health & lifestyle to identify if there is any change
expensive - used by universities & big companies
what is the goal of descriptive panels?
Want to see if various panelists have the same consensus for it to be precise
consumer panel
aren’t trained & are selected from the public based on specific demographics / criteria
Sample includes consumers – who they are trying to sell the product to
Use focus groups – consumers are asked to come in a grp & discuss the product
Collect a profile

3 samples, samples should look the same so when people are tasting them they shouldn’t be able to differentiate b/w them (unless they are testing for colour)
2 are the same & 1 is diff - person needs to identify which one is diff

Ex: a supplier is unavailable or changed – want to see if the ingredient from the changed supplier is too different & effects the overall product
Take ingredient from diff suppliers & test to see which one is the most diff & the most like the original

Create panelists – new product is introduced in the first few sessions & collect attributes of the product (brainstorm), they then agree upon each term (crunchy vs. crispy etc.), develop terms & unsure that everyone agrees so there is a precise measurement
