A
A salty sauce made from soybeans, wheat and salt- used as seasoning accompaniment for sushi and sashimi, has a strong savory aroma and is quite salty(15%-20%).
Several varieties and many different qualities are available, usually light soy sauce is used at the table and heavy soy sauce in the kitchen; heavy soy is usually less salty than the light variety.
